Today’s Frugal Dinner Recipe- Using Up Leftover Pork

I had a bit of a pork roast leftover from a dinner a few days ago. We had a one pot pork roast dinner, left overs last night and there was still a bit left for tonight. So, here is what I did with it:

Shred the remaining pork and place it in a pot.


4 potatoes, peeled and quartered

1 onion, chopped

2 carrots, sliced

2 stalks celery, sliced

cover with water and bring to a boil. Reduce heat and simmer.

I’ll probably thicken it with some cornstarch to make it more stew-like.

Serve with fresh homemade bread.


Since this is the third dinner we’ve had from a $7.00 roast, it’s been a very frugal piece of meat!
