Today’s Frugal Recipe – One Pan Chicken and Potato Bake

One Pan Chicken and Potato Bake

4 bone in chicken pieces

4 large potatoes cut into wedges

1/4 cup Italian dressing

1/4 cup parmesan cheese

Pour dressing over chicken and potatoes. Sprinkle with parmesan cheese. Bake at 400 1 hour or until chicken is cooked through.


Frugal Tip: This is a great way to cook “cheap” chicken. I buy very inexpensive bags of chicken legs with the thighs attached. I can generally get enough to feed the entire family for around $4.00. Then, when dinner is finished, if there is any chicken left, I cut the remaining meat of the bone and freeze it for a stir fry. That way you are getting more than one meal out of an already inexpensive recipe!
