Today’s Frugal Recipe – Chicken Take Two!

Today is the second meal from the $6.00 chicken I told you about the other day. We’re having Easy Chicken Pot Pie. It’s simple, inexpensive and oh so tasty!

Easy Chicken Pot Pie

2 cups chicken, chopped

1/3 cup parmesan cheese

2 green onions, chopped

1 cup vegetables of your choice (I use up whatever I have leftover in the fridge)

Mix the above ingredients together in a casserole dish. Top with:

1 cup Bisquick mix

1/2 cup milk

1 egg

Mix together in a bowl and pour over chicken mixture. Bake at 350 degrees for 30 minutes or until topping is golden brown.

See? Simple and inexpensive. This is a great way to use up leftover chicken and vegetables. To make it even more frugal, you can make your own biscuit topping. It’s not as easy then, but you can knock a few cents off the price.
