Today’s Frugal Recipe – Pork Chop Stir Fry

Pork Chop Stir Fry

2 pork chops, cut into bite sized pieces

1 carrot, sliced

1/2 green pepper, sliced

1/2 red pepper sliced

2 green onions, chopped

1 head broccoli, sliced

1 cup chicken broth

1/2 cup chicken and rib sauce

Cut pork chops into bite sized pieces. Brown in skillet until cooked through.

In a seperate bowl, mix together chicken broth and chicken and rib sauce until fully mixed.

Add broth mixture and vegetable to skillet. Cover and simmer until vegetables are tender.

*if you would like the sauce thicker, just add a couple tsp of flour. It will then thicken as it cooks*

 

I made this recipe for dinner last night. I actually doubled the vegetables as we had my son’s friend over for dinner. In fact, I only used 1 1/2 pork chops, rather than two. If you purchase a value pack of 8 chops when they are on sale, this is a great way to stretch that meat!
